Across communities like Castle Rock, Colorado, food insecurity often lives just beneath the surface. Behind familiar neighborhoods and busy streets are neighbors—seniors on fixed incomes, families navigating instability, veterans, individuals with disabilities, and those experiencing homelessness—wondering where their next nourishing meal will come from.
But the need isn’t only for food.
It’s for nourishment.
It’s for dignity.
It’s for belonging.
From seed to supper, we are changing that story.
From January through March 2026, Seeds of Exchange is honored to partner with Sunday Salmon—a community-centered nonprofit rooted in a simple yet radical conviction: love your neighbor by feeding them well.
Founded by Mary Grothe, Sunday Salmon grew from a personal journey of surrender and obedience—stepping away from achievement-driven success and into a life shaped by faith, hospitality, and love in action. What began as a weekly Sunday dinner has become a movement: offering delicious, organic, gluten-free meals—free of charge and open to all.
Why This Season Matters
This winter, Sunday Salmon is preparing to relaunch their mobile food trailer, allowing meals to move beyond one location and into the heart of the community—meeting neighbors exactly where they are.

These funds will serve as seed money to:
- Relaunch Sunday Salmon’s no-cost mobile food trailer
- Provide nourishing, allergen-friendly meals across Castle Rock
- Create community tables where people gather, connect, and dine with dignity
